These truffles make the perfect pick-me-up snack or dessert. I love using matcha, which is a type of green tea in powdered form, whenever I can in my cooking. It’s filled with antioxidants and has about ten times the antioxidants that regular green tea has! These truffles are chocolatey, gooey and delicious.
Matcha has a naturally bitter flavor so know that the outside of your truffles will have a slight bitter first bite. If you really don’t like bitter flavors (or if you’re making them for kids), then simply blend the matcha in with the rest of the ingredients. They won’t look as pretty on the outside but they’ll taste sweeter 🙂

For those who aren’t familiar with this super tea, welcome to the amazing world of matcha.
So, what is matcha green tea powder? Matcha green tea is pretty much regular green tea… on steroids. Matcha is a preparation of green tea leaves that have been dried and stone ground into a fine powder — which means when you drink matcha you are actually eating the whole green tea leaf, instead of just the steeped tea leaves in water.
Matcha comes in a variety of different grades, ranging from the lowest grade used for cooking, baking, and smoothies, up to ceremonial grade which has the highest level of amino acids. You can usually tell the quality of a matcha by how green it is – the deeper/brighter the green, the higher the quality. Lower quality or oxidized matcha has a distinctive hay-like smell and a dull brownish-green color.

L-theanine is a potent amino acid that’s primarily found in teas made from the Camellia sinensis plant. L-theanine acts as a relaxing agent or anxiolytic without sedative effects or any of the negative side effects of Xanax.
Skin health + Anti-aging:
When applied topically (onto the skin itself), green tea polyphenols have been shown to provide protection against damages caused by UVA and UVB exposure in the sun, which inhibits cancer development and slows aging of the skin. (24)
Chocolate Matcha Truffles
Dairy-free, Gluten-free, Refined Sugar-free, Vegan
Yield: Makes 10 truffles
1/4 cup toasted walnuts
1/2 packed cup pitted dates (I like medjool)
1 teaspoon raw coconut oil
2 Tablespoons raw cacao powder
1/2 teaspoon pure vanilla extract
1/4 teaspoon ground cinnamon
small pinch sea salt
1 teaspoon organic matcha powder
Place walnuts and dates in food processor and pulse until tiny crumbles form. It will look like sand.
Add the rest of the ingredients except for matcha powder. Process, stop and start, scraping down sides until combined into dough.
Remove dough and roll into small balls that are 1 teaspoon to 1/2 Tablespoon in size.
Place matcha powder in small bowl. Place 1 truffle in bowl with matcha at a time. Shake it around until it’s coated with matcha powder.
Store in airtight container in fridge for 3-5 days.
