After a long day at work, sometimes the last thing you’re thinking about is cooking. Just the idea of tolling away in the kitchen is enough to have you going through takeout menus in your head. But as convenient as take-out is, the ingredients leave a lot to be desired. A lot of restaurants rely on sugar, salt, and unhealthy fats to make their food taste good, and while we may enjoy it in the moment, down the line our health is in danger.

That’s why it’s good to stock up on recipes that are not only quick and healthy, but versatile so you don’t get bored and go back to those menus in your cupboard! Here are 4 great recipes using one base ingredient: cauliflower. Not only is cauliflower rice easy to make, it’s a great flavor transportation system!

Corn, Pea, Turmeric

Dairy-Free, Gluten-Free, Refined Sugar-free

Ingredients:

  • 1/2 head cauliflower, riced
  •  Drizzle of olive oil
  • 1 cup organic corn kernels
  • 1 cup frozen peas
  • 1 egg
  • ½ teaspoon ground turmeric
  • black pepper to taste
  • Sea salt to taste

Spicy Black Bean

Dairy-Free, Gluten-Free, Refined Sugar-free

Ingredients:

  • 1/2 head cauliflower, riced
  • Drizzle of olive oil
  • 1 cup cooked black beans
  • 1 cup chopped red pepper
  • 1 egg
  • ¼ teaspoon cayenne pepper
  • Sea salt to taste

Another great recipe, and with a kick! The cayenne pepper in this recipe really gives this dish a nice warmth. Cayenne pepper is also great because it helps with digestion, it’s an anti-inflammatory so it’s great at relieving joint pain, and it supports healthy weight loss [2].

Broccoli, Sesame Ginger

Dairy-Free, Gluten-Free, Refined Sugar-free

Ingredients:

  • 1/2 head cauliflower, riced
  • Drizzle of olive oil
  • 2 cups broccoli florets, chopped
  • 2 teaspoons ginger root, peeled and minced
  • 1 egg
  • 1 Tablespoon tamari
  • 1 Tablespoon sesame seeds
  • Sea salt to taste

Another easy and delicious dish, with the added benefit of ginger! Like turmeric, ginger is one of the most powerful spices in natural medicine and one that is widely used. Ginger is great for gastrointestinal relief like bloating, it can be effective at reducing cancer risk, and it is a powerful anti-inflammatory [3].

Lentils, Mushrooms and Spinach

Dairy-Free, Gluten-Free, Refined Sugar-free

Ingredients:

  • 1/2 head cauliflower, riced
  • Drizzle of olive oil
  • 1 cup cooked lentils
  • 1 cup sliced mushrooms
  • 2Tbsp tamari
  • 1 cup fresh or frozen spinach
  • 1 egg
  • black pepper to taste
  • Sea salt to taste

This last recipe is great for a lot of reasons, but one of our favorites is spinach. This delicious leafy green is packed with protein which is great for healthy muscle development, but it is also great at improving glucose control in diabetics, lowering cancer risk, and reducing blood pressure [4]!

Directions:

  1. In a food processor, blitz cauliflower until small pieces the size of rice form.
  2. In a large skillet or sautée pan over high heat, add olive oil, cauliflower and the rest of the ingredients except for the egg.
  3. Stir to combine and cook for 5-7 mins until softened and brown.
  4. Make a space in the center of pan and crack egg into center.
  5. Whisk egg with fork.
  6. Stir mixture to combine egg.
  7. Serve and Enjoy!
