Cookie dough is delicious. Cookies are good too, but there is something about licking the spoon, scraping the inside of the bowl and eating a few cookie dough balls that really makes life worth living. It reminds you of being a kid, or stealing cookie dough from your grandma’s bowl, or pinching cookie dough balls off the tray while your mom pretended not to notice.
Unfortunately, cookie dough is not very conducive to eating healthy. Except for now. With this holy grail of cookie dough recipes. Three words:
Healthy. Cookie. Dough.
I’m going to say that again, slower.
Like, eat it out of the bowl, no fear of raw egg, no processed flour or refined sugar sort of cookie dough. Healthy Girl’s-Night cookie dough. This is cookie dough you can eat post workout and not feel guilty over. This is trying-to-lose-weight cookie dough. This is everything you have ever wanted, guilty-self-indulgence without the guilt. Can I make this any clearer? No.
How are they healthy? Yes, I’ve said we cut out the flour and the refined sugar, but we’ve also added so much protein this could really be a post-workout snack. All your ingredients can be organic. You start with all the raw materials and go from there. This is a vegan friendly recipe.
The question you’re asking now is, but does it taste good?
Yes. The answer is yes.
- 2 cups chickpeas
- 1/4 cup peanut or coconut butter
- 3 packets stevia
- 1 scoop of (vanilla or chocolate) protein powder
- 1/2 tablespoon vanilla extract
- 2 tablespoon almond milk (or other liquid. Try coconut milk!)
- pinch of salt
- 1/4 cup dark chocolate chips or cacao nibs (dairy free to keep it vegan friendly)
Put everything but the chocolate chips into a food processor. Pulse until smooth. Put into a bowl, pour your chocolate in. Mix well. Healthy chocolate chip cookie dough.
Because I can never, never, never, ever leave a recipe alone, you can add a little more liquid (go to 4 tblsp instead of 2), pour the concoction into a bowl, get out your healthy cookies and turn it into cookie dough dip.
Yes, cookie dough dip. That you could take to a party. Then listen to everyone talk about how they’re going to gain so much weight eating it, all the while feeling comfortable in the knowledge that YOU aren’t going to make them fat. (Watch their surprised faces when you tell the truth. Priceless.)
