Boost your gut health with this Roasted Garlic Cauliflower, complete with cancer-fighting nutrients!

Roasted cauliflower bakes up crispy and tender with plenty of flavor to go around. Toss these versatile cauliflower florets in a combo of fresh garlic and tangy apple cider vinegar to add complexity without the fuss.

Fresh garlic is responsible for adding enticing flavor and aroma to this recipe. It has many health benefits to help stave off bacterial infections (like E. coli and salmonella) and has the ability to fight off cancer by shrinking and reducing tumor cells. (1Avocado oil has a smoke point that’s great for roasting or grilling in high heat temperatures. It has a mild flavor that won’t compete with other ingredients.

Apple cider vinegar (ACV) is rich in probiotics, amino acids, and enzymes to help keep your gut health in check. Together they help keep intestinal flora in tip-top shape and balance out the immune system. Look for ACV with thin strands known as “The Mother.” It’s the ultimate superfood you can add to just about anything, including marinades and salad dressings.

Begin by placing the cauliflower florets into a large mixing bowl. Toss with avocado oil and apple cider vinegar. Then, spread the cauliflower evenly onto a baking sheet lined with parchment paper. Tip: Wait until the end to add your salt. This will help keep necessary moisture in during the baking process. Scatter the garlic slices on top and bake for 25-30 minutes. As the garlic roasts, they will crisp into golden brown chips. Finish with sea salt and parsley before serving.

Tools:

  • Baking sheet
  • Parchment paper
  • Mixing bowl

Ingredients:

  •  1 medium head cauliflower, broken into florets
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons avocado oil
  •  3 cloves of garlic, thinly sliced
  •  1/4 teaspoon sea salt
  • 1/4 cup parsley, chopped

Instructions:

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Add cauliflower to a large mixing bowl and drizzle avocado oil and apple cider vinegar on top.
  3. Toss to coat.
  4. Pour the mixture on a baking sheet and spread evenly.
  5. Sprinkle shaved garlic on top and roast for 25-30 minutes.
  6. Top with sea salt and parsley before serving.
