Fresh garlic is responsible for adding enticing flavor and aroma to this recipe. It has many health benefits to help stave off bacterial infections (like E. coli and salmonella) and has the ability to fight off cancer by shrinking and reducing tumor cells. (1) Avocado oil has a smoke point that’s great for roasting or grilling in high heat temperatures. It has a mild flavor that won’t compete with other ingredients.
Apple cider vinegar (ACV) is rich in probiotics, amino acids, and enzymes to help keep your gut health in check. Together they help keep intestinal flora in tip-top shape and balance out the immune system. Look for ACV with thin strands known as “The Mother.” It’s the ultimate superfood you can add to just about anything, including marinades and salad dressings.
Begin by placing the cauliflower florets into a large mixing bowl. Toss with avocado oil and apple cider vinegar. Then, spread the cauliflower evenly onto a baking sheet lined with parchment paper. Tip: Wait until the end to add your salt. This will help keep necessary moisture in during the baking process. Scatter the garlic slices on top and bake for 25-30 minutes. As the garlic roasts, they will crisp into golden brown chips. Finish with sea salt and parsley before serving.
