Do you ever have those moments when you’ve just discovered/done something awesome, but no one is around to high-five you or share in the joy? Or you’re just not sure anyone will care as much as you? Like when you finally release that popcorn kernel from your tooth five frustrating days later and you’re like, “YES! I GOT YOU KERNEL I KNEW I WOULD! LIFE IS SO AWESOME HELL YEAH!”

I had one of those moments when I made this ice-cream. I had heard you can blend together coconut milk with frozen fruit and it would turn out like ice-cream. So I woke up one morning and threw together frozen bananas, frozen strawberries and full-fat coconut milk, and started my blender. When I tasted the outcome of that experiment, I literally dropped the spoon and went “NO. WHAT? NO. THAT’S SO EASY. THAT’S SO DELICIOUS! DO PEOPLE KNOW??” I wanted to jump and run around screaming and high-fiving the world to inform them about this recipe. Instead, I just ate it all out of the blender and smiled to myself like a creep.

Here is that recipe. Warning: I used a Blendtec Mini-Twister Jar, which is a small, yet high-powered blender. It’s pretty powerful, but even then the blender makes slightly scary noises and jumps around a bit. You just have to scrape down the sides once or twice in between and not be scared of loud blending noises for a few minutes. It’s worth it.

Strawberry and Banana Ice-Cream

Serves: 2

Ingredients

  • 4 strawberries, chopped into small pieces and frozen overnight
  • 2 bananas, chopped into slices and frozen overnight
  • 1/2 cup full-fat coconut milk

Instructions

  1. Blend together frozen banana slices and coconut milk
  2. Stop and scrape down the sides in between
  3. Once incorporated, add in the frozen strawberry pieces
  4. After a few minutes, this should be nice and smooth
  5. Top with shredded coconut, berries or nuts
